Almost any meat that you would like to retain its juices and cook slowly, such as: pot roast (add vegetables when roast is halfway done), chicken w/redskin potatoes, corned beef or cornish hens. Also be sure to check out Marie Callender's Crock Pot Clics. They are frozen and you just toss them in and add sauce (included) according to directions and I promise they taste just like homemade. They offer a variety of dishes.
